(Serves 4)
Ingredients
1/2 bowl broccoli florets
1/2 bowl mushrooms sliced
1/2 bowl chopped cabagge
1 onion roughly chopped
2-3 tbsp corns
50 gms paneer/ cottage cheese chopped
salt to taste
1 tsp black pepper
1 tsbp vinegar
1 tsp garlic cloves (optional)
1 tsp oil
4-5 cups water
Procedure
Take a big pan.
Heat oil.
Add garlic and toss for a min. (optional)
Add broccoli and cook for 3-4 mins.
Add sliced mushrooms and mix well.
Cover it for 3-4 mins on low medium flame.
Add chopped cabbage and mix well.
Cover it further for 2-3 mins on low medium flame.
Toss it well.
Add onion, corns and paneer.
Mix well and cover it further for 2-3 mins.
Add salt, black pepper.
Mix well.
Add water, vinegar and mix well.
Let it boil nicely for 15-20 mins on low medium flame.
For Serving
Serve hot Vegetable Soup with Bread Sticks or Toasted Bread or Garlic Bread.. Enjoy the chilly weather with the Soup!!
