Vegetable Soup

(Serves 4)










Ingredients


  1. 1/2 bowl broccoli florets

  2. 1/2 bowl mushrooms sliced

  3. 1/2 bowl chopped cabagge

  4. 1 onion roughly chopped

  5. 2-3 tbsp corns

  6. 50 gms paneer/ cottage cheese chopped

  7. salt to taste

  8. 1 tsp black pepper

  9. 1 tsbp vinegar

  10. 1 tsp garlic cloves (optional)

  11. 1 tsp oil

  12. 4-5 cups water

Procedure








  1. Take a big pan.

  2. Heat oil.

  3. Add garlic and toss for a min. (optional)

  4. Add broccoli and cook for 3-4 mins.

  5. Add sliced mushrooms and mix well.

  6. Cover it for 3-4 mins on low medium flame.

  7. Add chopped cabbage and mix well.

  8. Cover it further for 2-3 mins on low medium flame.

  9. Toss it well.

  10. Add onion, corns and paneer.

  11. Mix well and cover it further for 2-3 mins.

  12. Add salt, black pepper.

  13. Mix well.

  14. Add water, vinegar and mix well.

  15. Let it boil nicely for 15-20 mins on low medium flame.


For Serving


Serve hot Vegetable Soup with Bread Sticks or Toasted Bread or Garlic Bread.. Enjoy the chilly weather with the Soup!!
