Ingredients
For Vada
5-6 boiled potatoes
1 big onion sliced
2-3 green chilies finely chopped
2-3 red chilies in pieces
1 tea spoon grated ginger
1/2 tea spoon hing
1 tb spoon sarso
1-1.5 tb spoon mustard oil
Curry leaves
1 tb spoon chana dal
1 tea spoon moong dal
Salt to taste
1 tea spoon red chili powder
1 tea spoon dry mango powder
1 tea spoon coriander powder
For Batter
2-3 tb spoon besan
1 tea spoon salt
1/2 tea spoon red chili powder
1/2 tea spoon hing
1/2 tea spoon dry mango powder
1 tea spoon ajwain
For Vada Pav
Pav packets
1 tsp red chili powder
1 tsp chaat masala
coriander chutney
imli chutney
Procedure
For Vada
Take a pan, heat oil
Add mustard seeds, once start crackling add curry leave, red chilies, both the dal and hing.
Stir well for 2-3 mins.
Add grated ginger and after a min add sliced onions and green chili.
Mix well all the ingredients.
Lower the flame, add mashed potatoes and all the spices. Switch off the gas and mix well.
Make small small balls and keep it aside.
For batter
Mix besan and all other ingredients.
Add water, whisk well so that no lumps are there.
Batter should be in thick consistency
For Vada Pav
Cut pav into two.
Apply coriander chutney on one side and imli chutney on other.
Press vada a bit and keep it on one side of pav.
Sprinkle red chili powder and chaat masala and cover it with other side.
For Serving
Serve the Vada Pav with fried green chilies and fresh coriander chutney or imli chutney.
