Ingredients
Left over boiled rice
1 onion sliced
1 potatoes cut in cubes
1 tomato finely chopped
1 tbsp mustard seeds
10-12 curry leaves
1-2 green chilies finely chopped
1 tsp grated ginger
Salt to taste
1 tsp red chili powder
1/2 tsp turmeric powder
1 tsp dry mango powder
1 tbsp mustard oil
Procedure

Heat oil in a pan.
Add mustard seeds and curry leaves, stir for a min or two.
Add potatoes and cook well on low flame.
Cover it with a lid and cook till it turns soft.
Add onions and mix well.
Add ginger and mix well.
Cover it with a lid and cook till onions turns golden brown on low flame.
Add tomatoes and cook well for 10 mins on low medium flame.
Add spices and mix well.
Add 1/2 cup water and mix well.
Add the leftover rice and mix well.
Cover it with lid and cook for 5-7 mins on low flame.
For Serving
