Turmeric Rice

(Serves 2)





Ingredients


  1. Left over boiled rice

  2. 1 onion sliced

  3. 1 potatoes cut in cubes

  4. 1 tomato finely chopped

  5. 1 tbsp mustard seeds

  6. 10-12 curry leaves

  7. 1-2 green chilies finely chopped

  8. 1 tsp grated ginger

  9. Salt to taste

  10. 1 tsp red chili powder

  11. 1/2 tsp turmeric powder

  12. 1 tsp dry mango powder

  13. 1 tbsp mustard oil

Procedure




  1. Heat oil in a pan.

  2. Add mustard seeds and curry leaves, stir for a min or two.

  3. Add potatoes and cook well on low flame.

  4. Cover it with a lid and cook till it turns soft.

  5. Add onions and mix well.

  6. Add ginger and mix well.

  7. Cover it with a lid and cook till onions turns golden brown on low flame.

  8. Add tomatoes and cook well for 10 mins on low medium flame.

  9. Add spices and mix well.

  10. Add 1/2 cup water and mix well.

  11. Add the leftover rice and mix well.

  12. Cover it with lid and cook for 5-7 mins on low flame.

Serve your Hot Turmeric Rice with curd and enjoy..
