Ingredients
For Stuffing
10-12 potatoes boiled and mashed
10-12 pieces paneer cubes
2/3 cup peas
1 tbsp grated ginger
4-5 green chilies finely chopped
Salt to taste
1.5 tsp cumin and fennel seeds (roasted)
1.5 tsp red chili powder
1.5 tsp dry mango powder
1 tsp coriander powder
2 tbsp mustard oil
Pinch of asafetida
For Dough
2.5 cups all purpose flour
4-5tbsp oil
1 tsp salt
1.5 tsp ajwain

For Stuffing
Take a pan and heat oil.
Add grated ginger and green chilies, cook for 2-3 mins on low medium flame.
Add asafetida and mix well, add peas and cook for 10-12 mins on low medium flame, or till they are almost cooked.
Add spices and mix well.
Add paneer and mashed potatoes, switch off the flame.
Mix well all the ingredients and keep it aside.
For Dough
Take a mixing bowl and add all purpose flour and oil.
Add salt and ajwain, mix well all the ingredients.
With your fingers, mix all the ingredients till it holds the shape, when you press a portion together.
Now in batches add water and knead it to firm dough.
Cover it with damp cloth and keep it aside for 20-30 mins.
For Samosa
Make medium size balls of the dough.
Dust some flour and roll it flat, not to thin.
Cut from the center.
Brush one side with water.
Hold it together and fold and join the edges to form a corn.
Press the edges well so that it sticks together.
With the help of spoon or hand fill the potato filling.
On the left over side, apply some water and bind them together.
Repeat this step.
Preheat the airfryer for 5 mins at 200 degrees.
Brush the basket with oil.
Add the stuffed samosa in airfryer basket and brush again with oil.
Set the airfryer for 8-10 mins.
In between keep applying oil and shake a little.
For Serving
Garnish it with fresh coriander and serve hot with coriander chutney/ tomato sauce and tea.. Enjoy!!
