Samak Dosa

Serves 2

Ingredients
1 cup Samak Rice (Barnyard millet)
1/4 cup Sago
1 tsp grated ginger
2-3 green chilies
1 tbsp chopped coriander
2 tbsp curd
2 cups water
Ghee for greasing
Senda namak for taste
1 tsp cumin seeds
Procedure
Take a pan add sago and dry roast it for 3-4 mins.
Let it cool down completely.
Take a grinder, add Barnyard millet and sago.
Grind it to powder form.
Take a mixing bowl.
Add the powder, curd, ginger, green chilies, coriander and spices.
Add water and whisk it well.
It should be of pouring consistency.
Rest ot for 10-15 mins.
If required, add 1/2 cup of water. (optional)
Heat a Dosa pan, Add 2 big spoons of the batter.
Spread it evenly.
Grease it with ghee.
Let it cook for one side.
Gently flip it and cook it for a min or two.
For Serving
