Ingredients
For Stuffing
250 gms baingan sliced
2 small size onion finely chopped
1 tsp salt
1 tsp red chili powder
1 tsp dry mango powder
For Curry
2 small onions finely chopped
2-3 tomatoes finely chopped
1-2 green chilies
1-2 red chilies
1 tbsp grated ginger
1 tbsp grated garlic
Salt to taste
1 tsp red chili powder
1 tsp dry mango powder
1 tsp coriander powder
1/4 tsp asafetida
1 tsp cumin seeds
1/2 cup water
3-4 tbsp mustard oil

Take brinjal and cut it in X.
Take a bowl and chopped onion and spices.
Mix it well.
Fill brinjal with onion.
Heat oil in wok.
Add brinjal and cook on low flame for 15-20 mins and cover it.
Cook till it turns soft and take it out.
Keep it aside.
In same oil, add cumin seeds.
Add onions, red chilies and green chilies and toss it well.
Cook till it changes color.
Add ginger and garlic, mix well.
Cook further for 5-7 mins on low flame.
Add asafetida and mix well.
Add tomatoes and mix well.
Cook till it turns soft and mushy.
Add spices and mix well.
Add water and bring a nice boil.
Add cooked brinjal and mix well.
Cover it with the lid and cook further for 10-15 mins on medium low flame.
Remove the lid and mix again.
For Serving
Serve hot Onion Stuffed Baingan with curd and chapati and enjoy!!
