(Serves 4)
Ingredients
7-8 tomatoes and 2 green chilies grinded
1 tbsp grated ginger
Chopped veggies (4 turnip, 1/2 cauliflower, 1 beetroot, 1/2 cabbage, 1/2 pumpkin, 1 small bottlegourd)
1/2 cup paneer (cottage cheese) chopped
1/2 cup peas
1 capsicum chopped
1 lemon juice
Salt to taste
2 tsp pav bhaji masala
1 tsp red chili powder
2 tsp dry mango powder
1 tsp coriander powder
2 tbsp mustard oil
Procedure
Take a pressure cooker, add oil.
Add grated ginger and toss for a min or two.
Add tomato n chili paste and cook well for 10-15 mins on low medium flame.
Add spices and mix well.
Cook further for 5 mins.
Add chopped veggies and mix well.
Add 3-4 cups of water and mix well.
Cover it with a lid and give 4-5 whistles.
One’s cool down, open the lid and mash the veggies.
Cook further for 15-20 mins and add peas, capsicum and paneer cubes.
Add lemon juice and mix well.
Bring a boil or two.
For Serving
Add butter on top of bhaji and enjoy hot bhaji with pav, onions and coriander chutney..!!
