Matar Puri


Ingredients


For Fillings


  1. 1 big bowl peas

  2. 3-4 green chilies

  3. 1 inch ginger

  4. Salt to taste

  5. 1 tsp red chili powder

  6. 1 tsp dry mango powder

  7. 1 tsp coriander powder

  8. 2 tsp cumin seeds

  9. Pinch of hing

  10. 2 tsp oil and rest for frying


For Dough


  1. 2 cups wheat flour

  2. 2 tbsp all purpose flour (optional)

  3. 2 tsp oil

  4. 1/2 tsp salt

  5. 1/2 tsp ajwain

  6. Water as required


Procedure


For Filling

  1. Crumble the peas (not in a smooth paste)

  2. Heat oil in pan

  3. Add cumin seeds and hing

  4. Add crumbled peas and mix well for 5-7 mins

  5. Add spices and mix well

  6. Cook well till peas are dry, the excess water is not there.

  7. Keep it aside


For dough


  1. Mix all the above ingredients, except Water

  2. As required, add water and knead it in a dough

  3. Keep it aside with damp cloth or a lid

For Matar Puri


  1. Make small balls of the dough

  2. Roll it little bit and add peas filling

  3. Make it a potli and roll flat like puri

  4. Deep fry it on medium high flame



For Serving

Serve hot matar puri with alloo ki sabzi and raita
