Ingredients
500gms bitter-gourd (peeled)
2 potatoes sliced
1-2 onion sliced
Salt
1 tsp red chili powder
1 tsp dry mango powder
1 tsp coriander powder
1 tsp turmeric powder
1/4 cup oil

Wash the bitter gourd nicely and peel them.
(Do not throw away the peeled residue).
Sprinkle salt on the sliced bitter guard and residue and mix well .
Keep it aside for 5-6 hours or over night so that its bitterness go away.
Add water and Squeeze the residue and extract the excess water.
Take a mixing bowl.
Add all the spices and mix well.
Keep it aside.
Heat oil in a pan.
Add potatoes and fry it.
Fry till golden brown in color and keep it aside.
Add bitter-gourd (karele) in it.
Fry it nicely till golden brown in color and keep it aside.
One's cold stuff the spices in the sliced bitter-gourd (karele) and keep it aside.
Add the peeled residue and fry it.
Fry till brown black in color and keep it aside.
Now extract half oil from the pan and discard it.
Add sliced onions.
Cook till it changes color.
Add fried peeled reidue, fried potatoes and mix well on low medium flame.
Add stuffed bitter gourd and remaining spices and mix well.
Add 1/4 cup water and mix well.
Cover it with a lid on low flame.
After 8-10 mins switch off the flame.

Your Masaledar Bitter Gourd is ready . Enjoy it with chapatti and lassi.
