Masala Dosa

Ingredients


For Dosa

  1. 1 cup urad dal overnight soaked

  2. 3 cup chawal (tota chawal) over night soaked

  3. 1.5 tsp salt

  4. 1 tbsp suji

  5. Oil for greasing


For Masala


  1. 5-6 boiled potatoes

  2. 1 big onion sliced

  3. 2-3 green chilies finely chopped

  4. 2-3 red chilies in pieces

  5. 1 tea spoon grated ginger

  6. 1/2 tea spoon hing

  7. 1 tb spoon sarso

  8. 1-1.5 tb spoon mustard oil

  9. Curry leaves

  10. 1 tb spoon chana dal

  11. 1 tea spoon moong dal

  12. Salt to taste

  13. 1 tea spoon red chili powder

  14. 1 tea spoon dry mango powder

  15. 1 tea spoon coriander powder

Procedure


For Masala

  1. Take a pan, heat oil

  2. Add mustard seeds, once start crackling add curry leave, red chilies, both the dal and hing.

  3. Stir well for 2-3 mins.

  4. Add grated ginger and after a min add sliced onions and green chili.

  5. Mix well all the ingredients.

  6. Lower the flame, add mashed potatoes and all the spices. Switch off the gas and mix well

For Dosa Batter


  1. Grind the urad dal into smooth paste ( if required add little water for grinding)

  2. Add urad dal in a big mixing bowl

  3. Grind chawal into smooth paste ( if required add little water for grinding)

  4. Add chawal paste in the same mixing bowl and mix together

  5. Add salt mix it well

  6. Keep it aside for 6-7 hours for fermentation


For Dosa

  1. When making dosa, add water and mix well. It should be of medium consistency.

  2. Clean the dosa tawa nicely and grease it with oil

  3. Take 1 karchi of dosa batter and spread it on griddle on high flame.

  4. Grease it with oil and lower the flame

  5. Let it cook, if required add oil again so that the batter do not stick.

  6. Add aloo masala and press it.

  7. Fold the dosa half.


For Serving

Serve Dosa with chutney and sambar. Refer to our south indian section for their recipes.
