Serves 2-3
Ingredients
For Kofta
1 bowl grated Bottle Gours (Lauki)
100 gms grated Cottage Cheese (Paneer)
2 tbsp all Chickpea flour
Salt to taste + 1 tsp salt
1 tsp Red Chili Powder
1/2 tsp Dry Mango Powder
For Gravy
3-4 tomatoes chopped
2 onions chopped
2-3 green chilies chopped
Grated ginger
7-8 Garlic Cloves
Few cashews
Salt to taste
1 tsp dry mango powder
1/2 tsp coriander powder
2 tsp sugar
1 tsp cardamom powder
1/2 glass milk
3-4 tbsp cream
1 bay leaf
2 cloves
2 black pepper
1 Black Cardamom
Procedure
For Kofta
Take a bowl, add grated bottle gourd.
Add 1 tsp salt and mix it well.
Keep it aside for 15-20 mins.
Drain out the excessive water and keep it in a mixing bowl.
Add cottage cheese, chickpea flour and spices.
Mix it well and make a dough.
Make small balls out of the dough and keep it aside.
Take an Appe maker, add ghee and add these balls in it. (Note - You can even Deep fry or Shallow Fry it)
Cover it with a lid and let it cook from one side on low flame.
After 7-8 mins, check whether it is done or not.
If yes, flip it gently and cook from other side too.
One's done, keep it aside.
For Gravy
Take a wok and heat oil.
Add chopped tomatoes, onions, ginger, garlic and green chilies.
Cook it well, till it turns soft and mushy,
Add 1/2 cup water and let it cook further.
Add spices and mix it well.
Cook for a min or two.
Switch of the flame and let it cool down.
Add it in a grinder, add cashews and grind it to smooth paste.
Add that paste in wok, along with 1 cup water and cook for 10 mins.
On low flame, add milk and stir it well.
Add cream, mix it well.
Add sugar and cardamom powder, give it a nice mix.
Cook it further for 10 mins on low medium flame.
Your gravy is ready.
For Serving
When you are about to serve it - Take a serving bowl add gravy and then add Lauki kofta (Else the kofta will turn soft)
