Lauki Malai Kofta

Serves 2-3





Ingredients


For Kofta

  1. 1 bowl grated Bottle Gours (Lauki)

  2. 100 gms grated Cottage Cheese (Paneer)

  3. 2 tbsp all Chickpea flour

  4. Salt to taste + 1 tsp salt

  5. 1 tsp Red Chili Powder

  6. 1/2 tsp Dry Mango Powder


For Gravy

  1. 3-4 tomatoes chopped

  2. 2 onions chopped

  3. 2-3 green chilies chopped

  4. Grated ginger

  5. 7-8 Garlic Cloves

  6. Few cashews

  7. Salt to taste

  8. 1 tsp dry mango powder

  9. 1/2 tsp coriander powder

  10. 2 tsp sugar

  11. 1 tsp cardamom powder

  12. 1/2 glass milk

  13. 3-4 tbsp cream

  14. 1 bay leaf

  15. 2 cloves

  16. 2 black pepper

  17. 1 Black Cardamom


Procedure





For Kofta


  1. Take a bowl, add grated bottle gourd.

  2. Add 1 tsp salt and mix it well.

  3. Keep it aside for 15-20 mins.

  4. Drain out the excessive water and keep it in a mixing bowl.

  5. Add cottage cheese, chickpea flour and spices.

  6. Mix it well and make a dough.

  7. Make small balls out of the dough and keep it aside.

  8. Take an Appe maker, add ghee and add these balls in it. (Note - You can even Deep fry or Shallow Fry it)

  9. Cover it with a lid and let it cook from one side on low flame.

  10. After 7-8 mins, check whether it is done or not.

  11. If yes, flip it gently and cook from other side too.

  12. One's done, keep it aside.



For Gravy


  1. Take a wok and heat oil.

  2. Add chopped tomatoes, onions, ginger, garlic and green chilies.

  3. Cook it well, till it turns soft and mushy,

  4. Add 1/2 cup water and let it cook further.

  5. Add spices and mix it well.

  6. Cook for a min or two.

  7. Switch of the flame and let it cool down.

  8. Add it in a grinder, add cashews and grind it to smooth paste.

  9. Add that paste in wok, along with 1 cup water and cook for 10 mins.

  10. On low flame, add milk and stir it well.

  11. Add cream, mix it well.

  12. Add sugar and cardamom powder, give it a nice mix.

  13. Cook it further for 10 mins on low medium flame.

  14. Your gravy is ready.


For Serving


When you are about to serve it - Take a serving bowl add gravy and then add Lauki kofta (Else the kofta will turn soft)
