Lauki Ke Kofte

(Serves 4)


Ingredients


For Kofta

  1. 1 big bottle guard (peeled and finely chopped or grated)

  2. 1-2 green chilies

  3. 1 tbsp ginger

  4. Salt to taste

  5. 1 tsp ajwain

  6. 1 tsp red chili powder

  7. 1 tsp dry mango powder

  8. 1 tsp coriander powder

  9. Pinch of asafetida

  10. 7-8 tbsp besan

  11. Oil for deep frying


For Gravy

  1. 7-8 tomatoes (roughly chopped)

  2. 1-2 green chilies (roughly chopped)

  3. 1 tsp ginger

  4. Salt to taste

  5. 1 tsp red chili powder

  6. 1 tsp coriander powder

  7. 1 -2 tsp dry mango powder

  8. 1 tbsp tomato sauce (optional)

  9. Water as required


Procedure





For Kofta

  1. Take a mixing bowl.

  2. Add all ingredients except besan and mix well.

  3. Add besan and mix well.

  4. Make small balls and deep fry it on low medium flame till golden brown.

  5. Keep kofta aside.


For Gravy

  1. Take a pan and heat oil.

  2. Add ginger and cook for 1-2 mins on medium low flame.

  3. Grind tomatoes and green chilies together in smooth paste.

  4. Add this paste in kadai and cook till it changes color.

  5. Add water for gravy (as required) and let it boil for 5-10 mins.

  6. Add spices and cook for 5 mins.

  7. Add kofta in the gravy and cook for 5-10 mins.



For Serving

Garnish it with kasturi methi or fresh coriander and serve hot with phulka
