(Serves 2)
Ingredients
250 gms jackfruit (kathal - fried) - (I have airfried the jackfruit for 12-15 mins)
2 medium onions finely chopped
3-4 tomatoes grinded to paste
1 tbsp grated ginger
8-10 gralic cloves finely chopped
3-4 green chilies finely chopped
Salt to taste
1 tsp red chili powder
1.5 tsp dry mango powder
1 tsp coriander powder
1 tsp garam masala
1 tsp fenugreek leaves
2 tbsp mustard oil
Procedure
For Jackfruit
Pre heat the airfryer for 5-7 mins at 180 degrees.
Add the jackfruit in the airfryer basket and set it for 10 mins.
Shake it in between.
After 10 mins, brush some oil and shake again.
Set it for 5 more mins.
Your Jackfruit is ready, keep it aside.
For Curry
Take a wok and heat oil.
Add grated ginger, garlic cloves and green chilies, cook for a min or two on low medium flame.
Add onions and cook till it changes color.
Add tomato paste, along with 1 cup of water.
Let it cook for 2-3 mins on low medium flame
Add spices and mix it well.
Let it cook for 3-4 mins on low flame.
Add air fried jackfruit and mix it well.
Let it cook further for 2-3mins on low flame.
Add 1 cup water and mix well.
Cover it with a lid and cook for 5-10 mins on low flame.
Add fenugreek leaves and mix well.
Cover it and cook further for 8-10 mins on low medium flame.
For Serving
Your Kathal ki sabji is ready to serve.. Enjoy it with some Roti and Salad..
