(Serves 2)
Ingredients
250 gms jackfruit (kathal - fried) - (I have airfried the jackfruit for 12-15 mins)
2 medium onions finely chopped
3-4 tomatoes finely chopped
1 tbsp grated ginger
8-10 gralic cloves finely chopped
3-4 green chilies finely chopped
Salt to taste
1 tsp red chili powder
1.5 tsp dry mango powder
1 tsp coriander powder
2 tbsp mustard oil
Procedure
Take a kadai and heat oil.
Add grated ginger, garlic cloves and green chilies, cook for a min or two on low medium flame.
Add onions and cook till it changes color.
Add tomatoes and cook for 7-8 mins.
Add kathal and mix well.
Add salt and mix well, cover it for 7-8 mins.
Stir in between.
Add 1/2 cup water and mix well.
Cover it further with a lid and cook for 8-10 mins on low flame.
Stir in between.
Add rest of the spices, mix well.
Cover it and cook further for 8-10 mins on low flame.
For Serving
Garnish it with fresh coriander or kasuri methi and serve hot.
