Kashmiri Baingan


Ingredients


  1. 1 big brinjal Sliced

  2. 2 medium onion

  3. 2-3 green chilies

  4. 1 inch ginger

  5. 2-3 tbsp imli water

  6. Salt to taste

  7. Haldi

  8. 1 tsp cumin powder

  9. 2-3 tbsp sonf powder

  10. 2 tsp coriander powder

  11. 1 tsp red chili powder

  12. Pinch hing

  13. Oil


Procedure


For Egg Plant

  1. Sprinkle salt and turmeric powder on eggplant and keep it aside for 15-20 mins.

  2. With the help of tissue wipe the excess water from eggplant

  3. Take a pan and shallow fry the eggplant and keep it aside.


For Gravy


  1. Make a smooth paste of onion, ginger and green chili

  2. Heat 1 tbsp oil and add the onion paste

  3. Cook well for 3-4 mins

  4. Add spices and mix well

  5. Add 1 cup water for the gravy and let a boil come

  6. Add imli water and mix well

  7. Add the shallow fry eggplant and let boil come



For Serving

Garnish it with fresh coriander or kasuri methi and serve hot with rice
