Ingredients
1 big brinjal Sliced
2 medium onion
2-3 green chilies
1 inch ginger
2-3 tbsp imli water
Salt to taste
Haldi
1 tsp cumin powder
2-3 tbsp sonf powder
2 tsp coriander powder
1 tsp red chili powder
Pinch hing
Oil
Procedure
For Egg Plant
Sprinkle salt and turmeric powder on eggplant and keep it aside for 15-20 mins.
With the help of tissue wipe the excess water from eggplant
Take a pan and shallow fry the eggplant and keep it aside.
For Gravy
Make a smooth paste of onion, ginger and green chili
Heat 1 tbsp oil and add the onion paste
Cook well for 3-4 mins
Add spices and mix well
Add 1 cup water for the gravy and let a boil come
Add imli water and mix well
Add the shallow fry eggplant and let boil come
For Serving
Garnish it with fresh coriander or kasuri methi and serve hot with rice
