Ingredients
500 gms bitter gourd aka karele
Salt to taste
1 tsp red chili powder
1 tsp coriander powder
1 tsp dry mango powder
2-3 tbsp mustard oil
Procedure
Take bitter gourd and wash them nicely.
Do not peel them.
Cut the edges and scrap them.
Cut roundly and sprinkle 2 tsp salt, mix well and keep it aside for 6-7 hours.
(If any diabetic patient, can use its water to drink with some lemon juice and black salt)
Wash the bitter gourd nicely again.
Heat oil in a pan.
Add karele and cover it with a lid on low flame.
Stir in between.
It will start changing its color.
Add spices and mix well.
Cover it with lid for 10-12 mins and switch off the flame.
Let it rest further for 5 mins.
For Serving
Serve hot bitter gourd with phulka and curd or lassi.
