Gajar Aloo Methi

(Serves 3-4)




Ingredients


  1. 3-5 carrot chopped

  2. 2 medium potato cut

  3. 200 gms fenugreek leaves (methi) roasted

  4. 1 tbsp grated ginger

  5. Salt to taste

  6. 1.5 tsp cumin seeds

  7. 1 tsp red chili powder

  8. 1.5 tsp dry mango powder

  9. 1 tsp coriander powder

  10. 2 tbsp mustard oil

  11. Pinch of asafetida (optional)


Procedure






  1. Take a pan and heat oil.

  2. Add cumin seeds and asafetida, stir for a min.

  3. Add ginger and toss it for a min or two on low medium flame.

  4. Add potatoes and mix well.

  5. Cover it and cook for 10-12 mins on low medium flame, or till they are cooked.

  6. Check it with the help of fork, whether potatoes are cooked or not.

  7. Add carrot and mix well.

  8. Cover it and cook further for 15-20 mins on low medium flame.

  9. Add methi and mix well.

  10. Cover it with lid for 8-10 mins on low flame.

  11. Add spices and mix well.

  12. Cover for 2-3 mins and cook further for 5-7 mins.


For Serving

Sprinkle some black pepper and Serve hot with phulka and curd.
