Gajar Aloo Matar

(Serves 3-4)



Ingredients


  1. 3-5 carrot chopped

  2. 2 medium potato cut

  3. 2/3 cup peas

  4. Salt to taste

  5. 1.5 tsp cumin seeds

  6. 1 tsp red chili powder

  7. 1.5 tsp dry mango powder

  8. 1 tsp coriander powder

  9. 2 tbsp mustard oil

  10. Pinch of asafetida


Procedure






  1. Take a pan and heat oil.

  2. Add cumin seeds and asafetida, stir for a min.

  3. Add potatoes and cook for 10-12 mins on low medium flame, or till they are almost cooked.

  4. Add carrot and further cook for 10-12 mins.

  5. Add peas and mix well.

  6. Cover it with lid for 5-7 mins on low flame.

  7. Add spices and mix well.

  8. Cover for 2-3 mins and cook further for 5-7 mins.


For Serving

Sprinkle some black pepper and Serve hot with phulka and curd.
