Dum Aloo

Serves 4




Ingredients


  1. 500 gms baby potato (peeled and pricked)

  2. 1 big onion (optional)

  3. 6-7 tomatoes

  4. 3-4 green chilies

  5. 1 inch ginger

  6. 6-7 cashews or almonds

  7. 1 cup curd (whisked)

  8. 1 tbsp cream

  9. 1 bay leaf

  10. 3-4 long

  11. 1 moti ilaichi

  12. Salt to taste

  13. 1/2 tsp red chili powder

  14. 1/2 tsp dry mango powder

  15. 1 tsp coriander powder

  16. 1tbsp kasuri methi

  17. 1tbsp garam masala

  18. Oil for shallow frying


Procedure





For Shallow Frying Potatoes


  1. Peeled the potatoes and keep it aside in water for 15-20 mins

  2. Drain out the water

  3. Prick the potatoes

  4. Heat oil in a pan for shallow frying

  5. Add potatoes and on low medium flame fry the potatoes Till golden brown

  6. Take it out of the pan and keep it aside


For Air Fryer Way


  1. Pre heat the air fryer at 180 degree for 5-7 mins.

  2. Add pricked potatoes and set the fryer for 10 mins.

  3. Add little oil for greasing (optional).

  4. Shake the basket in between.

  5. Set the fryer for 10 more mins.

  6. Cook till golden brown in color and keep it aside.

For gravy

  1. Take grinder and add onion (optional), tomatoes, green chilies, ginger and cashew/almonds and grind it into smooth paste

  2. Take a pan and heat 1 tbsp oil

  3. Add bay leaf, long and moti ilaichi and sauté well for 1-2 mins

  4. Add the onion, tomato paste and cook well till it boils.

  5. Add 1 cup water and mix well.

  6. Add all the spices and cook well for 8-10 mins on low medium flame.

  7. Add curd and cream on low flame and stir well

  8. Let the boil come and in low flame add shallow fry potatoes or air fried potatoes.

  9. Cook well for 10-15 mins on low flame.

For serving

Garnish it with kasuri methi or fresh coriander and serve hot with roti/ naan/ tandoori roti (try our recipe)
