(Serves 4)
Ingredients
4-5 potatoes (cut in cubes)
2-3 green chilies sliced from centre
1 inch ginger chopped
4-5 tomatoes finely chopped
3-4 red chilies
Salt to taste
1/2 tsp fenugreek seeds
1 tea spoon cumin seeds
1.5 tea spoon red chili powder
1.5 tea spoon dry mango powder
1 tea spoon coriander powder
1/2 tsp turmeric powder
Pinch of asafetida
1-2 tbsp mustard oil
Procedure
Take a cooker and heat oil.
Add cumin seeds, fenugreek seeds and asafetida and cook for a min.
Add red chilies and cook for a min.
Add ginger and green chilies, cook further for 2-3 mins.
Add chopped tomatoes and cook for 8-10 mins.
Add all the spices and mix well.
Add 1.5 - 2 cups water and bring it to boil.
Add potatoes, mix well and cover it with lid.
Give a whistle and simmer the stove for 2-3 mins.
Switch off the flame and let it cool.
For Serving
Garnish it with fresh coriander and Serve Dhaba Style Aloo with puri / matar kachori or matar puri and enjoy.
