Curd Rice

(Serves 2)






Ingredients



  1. Leftover Rice

  2. 1 cup whisk curd

  3. 1 onion sliced

  4. 1-2 green chili chopped

  5. 1 tbsp grated ginger

  6. 7-8 chopped garlic

  7. 1 tsp cumin seeds

  8. 2 tsp mustard seeds

  9. 2-3 red chilies

  10. Curry leaves

  11. 8-10 cashews

  12. 2-3 tbsp ghee

  13. 1/2 tsp Salt

  14. 1/2 tsp Red Chili Powder

  15. 1/4 tsp Asafetida



Procedure





For Tadka

  1. Heat ghee in a pan.

  2. Add cumin seeds and let it crackle for a min.

  3. Add mustard seeds and curry leaves.

  4. Let it crackle for two-three mins.

  5. Add garlic, ginger, red chilies and cashews.

  6. Toss for a min or two.

  7. Add onions and green chilies.

  8. Cook till it turns transparent.

  9. Add asafetida, salt and red chili powder.

  10. Mix well and cook for 4-5 mins on low medium flame.

  11. Switch off the flame and keep it aside.


For Serving

  1. Take a serving bowl.

  2. Add rice and curd, mix well.

  3. Add the prepared tadka.

  4. Serve it.
