Channa Dal kachori

(Serves 5)





Ingredients


For Fillings


  1. 1 cup chana dal (soaked)

  2. 1 tsp cumin seeds

  3. 1 tsp fennel seeds (sauf)

  4. 1/4 tsp asafetida

  5. 1 tsp red chili powder

  6. 1 tsp coriander powder

  7. 1.5 tsp dry mango powder

  8. 1 tsp garam masala

  9. 1.5 tsp chaat masala

  10. Salt to taste

  11. 1-2 tbsp oil


For Dough


  1. 2 cups wheat flour

  2. 1 cup all purpose flour (maida)

  3. 1/4 cup refined oil

  4. 1 tsp salt

  5. 1.5 tsp ajwain

  6. Water as required


Procedure



For dough


  1. Mix all the above ingredients, except Water.

  2. As required, add water and knead it in a dough.

  3. Cover it with damp cloth for 20-30 mins.


For Filling

  1. Grind the soaked chana dal and keep it aside. (Add 1-2 tbsp water)

  2. Heat 1-2 tbsp oil.

  3. Add cumin seeds, fennel seeds and asafetida.

  4. Toss for a min.

  5. Add spices except salt and mix well.

  6. Add grinded dal and mix well.

  7. Cook for 8-10 mins or till it becomes dry.

  8. Switch off the flame and add salt.

  9. Mix well.

  10. Your filling is ready.

For Stuffing Kachori


  1. Make small balls of the dough

  2. Roll it little bit and add dal filling

  3. Make it a potli and roll flat with hands or use rolling pin.


For Air Fried Chana Dal Kachori

  1. Pre heat the air fryer at 180 degrees for 5 mins.

  2. Keep the stuffed dough in the basket.

  3. Apply oil on both sides and set the air fryer for 8-10 mins.

  4. In between keep shaking the basket.

  5. If kachoris are not cooked, fry it for 5 more mins or accordingly.


For Fried Chana Dal Kachori



  1. Heat oil for frying.

  2. Add stuffed kachori in oil.

  3. Fry it on low medium flame.

  4. Fry till golden brown in color.



For Serving

Serve hot Chana Dal Kachori with Alloo ki sabzi / Dhai Aloo/ Dhaba Style Aloo and raita
