Ingredients
500gms okra cut (one inch)
1 onion cut in cubes
2-3 red chilies
1 small onion finely chopped
2 tomatoes finely chopped
1 tsp grated ginger
1 tsp grated garlic
1 tsp salt
1 tsp red chili powder
1 tsp dry mango powder
1 tsp coriander powder
2 tbsp mustard oil
Procedure

Heat oil in a pan.
Add grated ginger and garlic, toss well for 2-3 mins.
Add onions and cook till it changes color.
Add tomatoes and mix well, cover it with lid and cook for 8-10 mins on low medium flame till it turns soft.
Stir it in between, so that it do not stick.
Till then, take another pan and add 1 tbsp oil.
Add onion cubes and red chili and toss for 4-5 mins on low medium flame and keep it aside.
Check the tomatoes, whether it turned soft. If yes, add spices and mix well.
Add okra and tossed onion and red chili, mix well.
Cover it with lid for 3-4 mins.
For Serving
Serve hot Bindi Do Pyaaza with curd and chapati and enjoy!!
