Ingredients
500 gms baingan sliced
7-8 small size onion sliced
2 tsp salt
2 tsp red chili powder
2 tsp dry mango powder
2 tsp coriander powder
2 tbsp mustard oil
Procedure
Wash onions and brinjal and cut it in X .
Take a bowl and mix spices .
Fill onion and brinjal with mix spices.
Heat oil in kadai.
Add brinjal and cook on low flame for 15-20 mins and cover it.
Add onions and mix well.
Add left over mixed spices and sprinkle it on the veggies .
Cover it for 15 mins or till the veggies are cooked.
In between keep stiring.
For Serving
Serve hot bharwan baingan with curd and chapati and enjoy!!
