(Serves 4)
Ingredients
500gms bitter-gourd
1 raw mango ( peeled and grated )
2-3 tsp salt
1 tsp red chili powder
1 tsp dry mango powder
1 tsp coriander powder
3-4 tbsp mustard oil
Procedure
Wash the bitter gourd nicely and peel them.
(Do not throw away the peeled residue).
Sprinkle salt on the sliced bitter guard and residue and mix well .
Keep it aside for 5-6 hours so that its bitterness go away.
Squeeze the residue and extract the excess water.
Add grated raw mango, spices and mix well .
Your bitter guard filling is ready.
Stuff the filling in sliced bitter-gourd.
Heat oil in a pan.
And add bitter-gourd (karele) in it.
Let it cook for 20-25 mins on low flame (cover it with a lid).
Flip it in between and again cover it with a lid and let it cook well, till the outer texture turns soft.
For Serving
Your healthy bitter gourd is ready . Enjoy it with chapatti and lassi.
