Bhandara Aloo

(Serves 4)






Ingredients


  1. 4-5 boiled potatoes (mashed)

  2. 2-3 green chilies grinded

  3. 1 tea spoon grated ginger

  4. 4-5 tomatoes grated

  5. Salt to taste

  6. 1 tea spoon cumin seeds

  7. 1.5 tea spoon red chili powder

  8. 1.5 tea spoon dry mango powder

  9. 1 tea spoon coriander powder

  10. 1 tsp fennel seeds (sauf)

  11. 1 tsp black pepper

  12. 1 tsp chaat masala

  13. 1 bay leaf

  14. Pinch of asafetida

  15. 1 tsp garam masala

  16. 1-2 tbsp oil


Procedure





  1. Take a kadai.

  2. Heat oil, add cumin seeds, asafetida and cook for a min.

  3. Add ginger cook well for 2-3 mins.

  4. Add all the spices and mix well.

  5. Add tomato paste, green chilies and bay leaf, mix well on low lame.

  6. Let it cook for 8-10 mins on low flame.

  7. Add 1.5-2 cups water and bring it to boil.

  8. Add mashed potatoes and bring it to boil.

  9. Cook for 15-20 mins.

  10. Add kasuri methi and garam masala, mix well cook further for 5 mins.


For Serving


Garnish it with fresh coriander and Serve Bhandara Aloo with puri / matar kachori or matar puri and enjoy.
