Baingan Curry





Ingredients


  1. 250 gms small brinjal (sliced “X”)

  2. 1 onion finely chopped

  3. 3-4 tomatoes finely chopped

  4. 1-2 green chilies finely chopped

  5. 1 tsp grated ginger

  6. Salt to taste

  7. Turmeric powder

  8. 1 tsp red chili powder

  9. 1 tsp dry mango powder

  10. 1 tsp coriander powder

  11. 1/2 tsp garam masala

  12. Oil for shallow fry


Procedure


  1. Sprinkle salt and turmeric powder on brinjal and keep it aside for 20-30 mins.

  2. Heat oil and shallow fry the brinjal.

  3. In same oil add grated ginger and sauté for a min or two.

  4. Add onions and cook till it changes colour.

  5. Add tomatoes and mix well.

  6. Add water for curry (i have added 1/2 cup water).

  7. Cover it with lid on low medium flame for 7-9 mins.

  8. Add spices and mix well.

  9. Add brinjal and cover it with lid for 10-15 mins on low medium flame.


For Serving

Garnish it with kasuri methi and serve hot with rice/ phulka and curd. Enjoy!!
