Ingredients
250 gms small brinjal (sliced “X”)
1 onion finely chopped
3-4 tomatoes finely chopped
1-2 green chilies finely chopped
1 tsp grated ginger
Salt to taste
Turmeric powder
1 tsp red chili powder
1 tsp dry mango powder
1 tsp coriander powder
1/2 tsp garam masala
Oil for shallow fry
Procedure
Sprinkle salt and turmeric powder on brinjal and keep it aside for 20-30 mins.
Heat oil and shallow fry the brinjal.
In same oil add grated ginger and sauté for a min or two.
Add onions and cook till it changes colour.
Add tomatoes and mix well.
Add water for curry (i have added 1/2 cup water).
Cover it with lid on low medium flame for 7-9 mins.
Add spices and mix well.
Add brinjal and cover it with lid for 10-15 mins on low medium flame.
For Serving
Garnish it with kasuri methi and serve hot with rice/ phulka and curd. Enjoy!!
