Ingredients
1 brinjal sliced
1 onion sliced
1 onion finely chopped
2-3 green chilies
4-5 garlic cloves
1 lemon juice
Fresh Corainder leaves
Salt to sprinkle
Red chili powder to sprinkle
Turmeric powder to sprinkle
Coriander powder to sprinkle
Dry Mango powder to sprinkle
2 tbsp + 2tbsp mustard oil

Sprinkle the spices on sliced Brinjal and keep it aside for 15-20 mins.
Heat oil in a pan.
Add coated brinjal and cook well on low medium flame.
Cook till it turns soft and mushy and keep it aside.
In the same pan, add 2 tbsp oil, heat it.
Add green chilies and garlic cloves and toss it well for 4-5 mins or till it is slight brown in color.
Take it out and add it on the cooked Brinjal.
Add sliced onions and cook well till golden brown in color.
Take it out and transfer it on the cooked Brinjal.
Mash well all the ingredients.
Add chopped onions and fresh coriander.
Squeeze a lemon.
Mix well the ingredients.
For Serving
Your Baingan Chokha is ready.. Serve it with Rice, Chappati and Enjoy!!
