Baingan Bharta

Ingredients


  1. 1 big onion finely chopped

  2. 4-5 tomatoes finely chopped

  3. 2-3 green chilies finely chopped

  4. 1 tbsp grated ginger

  5. 1 brinjal roasted

  6. 1 small cup peas

  7. 1 tbsp mustard oil

  8. Salt to taste

  9. 1 tsp red chili powder

  10. 1 tsp dry mango powder

  11. 1 tsp coriander powder


Procedure



  1. Take a kadai and heat oil

  2. Add onions and sauté well till golden brown

  3. Add tomatoes and sauté well for 10-12 mins on low medium flame

  4. Add peas and mix well

  5. Add all the spices and mix well.

  6. Cover it with a lid on low flame for 13-14 mins

  7. Add roasted brinjal and mash it with a masher

  8. Cover it with a lid for 10-15 mins



For Serving

Garnish it with fresh coriander and serve hot bharta with parantha or roti
