Ingredients
1 big onion finely chopped
4-5 tomatoes finely chopped
2-3 green chilies finely chopped
1 tbsp grated ginger
1 brinjal roasted
1 small cup peas
1 tbsp mustard oil
Salt to taste
1 tsp red chili powder
1 tsp dry mango powder
1 tsp coriander powder
Procedure
Take a kadai and heat oil
Add onions and sauté well till golden brown
Add tomatoes and sauté well for 10-12 mins on low medium flame
Add peas and mix well
Add all the spices and mix well.
Cover it with a lid on low flame for 13-14 mins
Add roasted brinjal and mash it with a masher
Cover it with a lid for 10-15 mins
For Serving
Garnish it with fresh coriander and serve hot bharta with parantha or roti
