Ingredients
Half brinjal (sliced)
2 small potatoes (peeled and sliced)
1 tsp ginger garlic paste
1-2 green chilies finely chopped
1 onion finely chopped
2 tomatoes finely chopped
Salt as per taste
1 tsp red chili powder
1 tsp dry mango powder
1 tsp coriander powder
1 tsp oil
1/2 cup water
Procedure
Heat oil in pressure cooker.
Add ginger garlic paste and cook for a min.
Add green chilies and onions and cook till it changes colour.
Add tomatoes and cook for 5-7 mins.
Add spices and mix well.
Add potatoes and cook for 7-8 more mins.
Add sliced brinjal and stir for 2-3 mins.
Add water and mix well.
Cover it with lid.
Switch off the flame after 1-2 whistle/s.
You can dry up the gravy if you want (optional)
For Serving
Garnish it with fresh coriander and serve hot with rice and enjoy
